Raisin Cookies
2 1/2 cups white flour                                                1 cup soft butter                  2 cups sultana raisins
1 1/2 cups whole wheat flour                                      1 cup white sugar                1 1/2 cups water
1       tsp. baking powder                                           1 cup brown sugar
1       tsp. baking soda                                               3 eggs
1       tsp. salt                                                            1 tsp. vanilla
1       tsp. cinnamon (optional)
In small saucepan measure the 2 cups of sultan raisins and the 1 1/2 cups of water.
Boil the raisins until 1/2 cup liquid is left, it will look like juice.
Set aside to cool.
Mix 1 cup of soft butter and both sugars. Mix well.
Add vanilla.
Add eggs one at a time and mix well.
Stir the flour, baking powder, baking soda, salt, and cinnamon together.
Add to the butter mixture a little at a time, the dough will be hard to mix but mix it well.
Now empty the contents of the sucepan all at once and work into the dough, which will become easier to mix.
Drop by dessert spoonful onto cookie sheet.
Bake at 350 depending on your oven. I set mine at 340.
Bake until brown.
Store in air tight container.
